This honey soy Sriracha tilapia en papillote was so delicious and fresh, and incredibly easy to make. I love the combination of the sweet honey and the spicy Sriracha.
En papillote you ask? The term traditionally means "cooked and served in paper." It's an especially wonderful and foolproof method for cooking fish. The fish is gently steamed in the parchment paper, and is infused with the flavors of the ingredients you have added.We recently got an amazing fish market in our neighborhood. Even though I live on the west coast and in a very densely populated area, I've never actually had an available "fishmonger." So frustrating until now.
This fish market is amazing. They tell you where your fish comes from, and they package it perfectly. This is the place that tenderly packaged my clams after my unfortunate clam suffocating incident. This tilapia was incredible. It was so fresh. I used to be the only customer in the store, but now I'm having to get in line. This is probably a good thing. They will stay in business!
This tilapia was so succulent. We served it with an Asian cabbage salad and brown rice. If you can't find tilapia, you can use any flaky white fish.
One of the ingredients called for in the fish is honey. As luck would have it, I just received a jar of the most amazing Happy Valley Rewarewa honey from New Zealand (Disclosure: I received the honey from Happy Valley, all opinions are my own. I was not compensated other than one jar of honey). This honey is a revelation. I've always just bought supermarket honey and have never paid much attention. I had no idea. This honey has such a rich and deep flavor. Trust me. It's really good.

Honey Soy Sriracha Tilapia en Papillote
Ingredients
Instructions
- Preheat the oven to 450 degrees F.
- Place two large pieces of parchment or foil on top of a half sheet pan. Divide the fish between the two pieces of paper/foil.
- Sprinkle the fish with the salt, pepper, garlic, and lime juice. Let rest for about 10 minutes.
- Mix the honey, soy, and Sriracha. Pour evenly over the fish.
- Loosely enclose the fish with the paper/foil, and seal by wrapping the edges of the paper/foil tightly. If you are using foil, slit it to allow steam to escape.
- Place the baking sheet in the oven on the center rack and bake for 15 to 18 minutes, until flaky.
