These apple streusel muffins are loaded with chunks of tart apples, topped with a brown sugar and cinnamon streusel, and then drizzled with a vanilla glaze.
These muffins are really easy to make, and are perfect for the holidays or any time, especially when you have unexpected houseguests. As long as you have flour, eggs, butter, sugar, baking powder, baking soda, vanilla, and a large apple on hand, you can quickly whip up these muffins.

If you try these, you'll be really happy with the glaze too. I love the vanilla flavor and the bright white look of the drizzle.
I used a large Braeburn apple for these muffins, but any tart and crisp apple that you would use in an apple pie will work.
These apple streusel muffins are wonderful for breakfast or a mid morning coffee break. They are also great for an after school snack, just before starting your homework. Just ask my grandson (and his friend Kyle, who declared them "delicious").

Apple Streusel Muffins
ingredients:
Muffins
- 8 1/2 ounces (2 cups) unbleached all purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup melted and cooled butter
- 1 1/4 tsp vanilla
- 1 1/2 cups peeled chopped tart apples (about one large apple cut into approximately 3/8 inch cubes)
Streusel Topping
- 1/3 cup packed brown sugar (light or dark)
- 1 tablespoon flour
- 1/8 teaspoon cinnamon
- 1 tablespoon cold butter
Glaze
- 3/4 cup powdered sugar
- 2 to 3 teaspoons 2% milk
- 1 teaspoon melted butter
- 1/8 teaspoon vanilla
- Pinch of salt
instructions:
- Preheat the oven to 375 degrees F. Grease a 12 cup muffin tin, or line with paper liners
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the eggs, butter, and vanilla. Add the egg mixture to the flour mixture, and mix with a spatula until all of the flour is moistened. Fold in the apples.
- Portion the dough among the cavities of the muffin tin, filling each cavity about 3/4 full. I used an ice cream scoop, which worked perfectly.
- Whisk together the brown sugar, flour, and cinnamon for the streusel. Using your fingertips, mix in the butter until you have a crumbly mixture. Sprinkle it over the muffin dough.
- Bake the muffins for 15 to 20 minutes, until a toothpick comes out clean. Cool for 5 minutes in the muffin tin, and then cool on a wire rack.
- Mix the glaze ingredients and drizzle over the cooled muffins. Once the glaze has hardened, store the muffins in an airtight container.
