This cheesy vegetable tart, along with a salad, is a wonderful lunch for 3 to 4 people.
For the vegetables, I used a small trombetta squash from my cousin's garden along with a small tomato. The trombetta is so sweet and fresh tasting. My cousin's hobby is suburban farming, and she is incredible. I'm so fortunate to be a recipient of the bounty of her garden.
Yes, it's that time of year, when batches of summer squash and produce land on your front porch.
You can also use zucchini, crook neck, pattypan, or other summer squash in this tart if you can't find trombetta, which I'm pretty sure is only available at farmers' markets or from private gardens.
I made this tart in my air fryer (affiliate link) using a 6 inch Anchor Hocking pie pan. I love the convenience of using an air fryer for baking, especially when it's too hot to turn on my oven.
I have the Avalon Bay air fryer. It's really reasonably priced, especially if you're not sure if you want to spend a bundle on a new countertop appliance. Lately, I've been lusting after the Breville Smart Oven that has an air fryer option. I already have a Breville toaster oven, which works perfectly and I adore, so it would be really hard to justify getting another one just for the air fryer function.... hmmmmm. I must resist.....
How do you add and remove the tart pan from the air fryer basket?
This was definitely a dilemma for me. To avoid burning the back of your hand, be sure to use an oven mitt to place the pan in the air fryer basket before baking, as well as before removing the pan when the tart is finished baking. I actually used a parchment sling to lower the pan into the basket (and removed the parchment before baking) because I didn't want to spill any of the egg and cheese mixture. I used an oven mitt to remove the finished tart. I've seen little pans with a handle (like a bucket handle) for baking in an Instant Pot. I bet they'd work well here too. You could also use tongs to lift up one side of the finished tart before grabbing it with an oven mitt.This tart is cheesy and delicious. The cheese topping for the tart is crusty and golden brown, and the tart is loaded with veggie goodness.

P.P.S. If you don't have an air fryer, you can bake this cheesy tart in your oven or toaster oven at 375 degrees F for about 30 to 35 minutes, adding the additional cheese topping during the last 5 minutes.

Air Fryer Cheesy Summer Vegetable Tart
ingredients
- Savory pie crust, store bought or homemade, enough to line a six inch pie or tart pan, chilled.
- 2 large eggs
- 1/4 cup milk
- Salt and pepper to taste
- 1/2 cup cooked (cut into 1 inch pieces and simmered or steamed for about 10 minutes) summer squash (such as zucchini), chopped
- 1/4 cup raw tomato, chopped
- 1/4 cup grated mozzarella cheese
- 1/4 cup grated cheddar cheese
instructions
- Heat the Air Fryer to 360 degrees F.
- Line a six inch pie or tart pan with your crust and trim any excess. Prick the bottom of the crust a few times with a fork.
- With an electric mixer or immersion blender, beat the eggs until they are fluffy. Add the milk, a pinch of salt and pepper, summer squash, tomato, and half of each of the cheeses, and stir.
- Pour the mixture into the prepared crust, up to 1/4 inch below the top of the pie crust.
- Place the tart in the basket of the air fryer, and bake for 15 minutes. Sprinkle the top of the tart with the rest of the cheese and return it to the air fryer. Bake for another 3 to 5 minutes, until golden brown.
- Remove the tart from the air fryer basket and cool on a wire rack. Serve warm or at room temperature.

I haven't bought an air fryer yet. Mostly because I understand it is not suited for large batches. But that air fryer toaster oven sounds very interesting.
