These chipotle lime chicken wings make a hearty appetizer or a delicious main course. They are easy to make, and require very little hands on time.
These chipotle chicken wings are spicy and smoky, thanks to chopotle chiles in adobo sauce.
Chipotles in adobo are actually dried chiles canned in a smoky sweet-ish sauce and they add so much flavor to lots of dishes. I like to puree the contents of the can and keep it in a jar in the fridge to add to scrambled eggs, bloody Marys, quesadillas, and tacos.
I served these with a sour cream, lime, and cilantro dipping sauce. They were sooo good!
You can't have too many recipes for chicken wings, especially in preparation for game day parties. After all, before you know it, football season will be here.
If you want to create a chicken wing buffet, these wings would be fabulous with One-Pot Sticky Chicken Wings, Korean-style Chicken Wings, and Pepper Jelly Glazed Chicken Wings.
Ingredients
Besides the chipotle sauce, all you need is lime juice, some minced garlic, salt and pepper, and olive oil.
Of course, you'll need chicken wings too! You can buy pre-cut chicken wings, sometimes labeled "party wings." If you do, you will need about two and a half pounds rather than three.
I recommend sectioning your own chicken wings and saving the tips in the freezer to make stock later.
You can make these wings either by grilling them or preparing them in the oven.
Oven Method:
To cook these wing in the oven, bake them at 400 degrees F on a parchment lined baking sheet for about 35 minutes.
Next, toss them in the sauce, and bake them for 10 minutes more. Finally, turn on the broiler with the wings still on the middle rack of the oven, and broil for 3 to 5 minutes, watching them closely.
Grill Method:
Prepare your grill by heating it on one side, leaving one side cooler for indirect cooking.
Cook the wings on the cool side of the grill, covered turning them occasionally, for about 15 to 20 minutes. Toss them in the sauce and then grill them on the hot side of the grill until nicely browned, about two to three mintutes.
Serve these wings with a sour cream, lime, and cilanto dipping sauce or your favorite ranch or blue cheese dressing.
I have made these wings several times, both on a grill and in the oven. They are super easy and you can whip them up in no time.

Chipotle Lime Chicken Wings
Ingredients
- 1/3 cup olive oil
- 4 tablespoons of pureed chipotles in adobe (I puree the whole can with an immersion blender and then measure what I need)
- 3 tablespoons lime juice
- 1 tablespoon minced garlic
- A pinch of salt and pepper
- 3 pounds chicken wings, wing tips removed, and wings cut into two sections
- 1/2 cup sour cream
- 2 tablespoons lime juice
- Handful of chopped cilantro
- Salt
Instructions
- Mix the olive oil, chipotles, lime juice, garlic, and salt and pepper in a large bowl. Set aside.
- Oven Method: Heat the oven to 400 degrees F and line a rimmed baking sheet with parchment paper. Place the wings, skin side up, on the parchment paper and bake for 35 minutes.
- Remove the wings from the oven and toss them in the sauce and return them to the oven for an additional 10 minutes.
- Leaving them on the middle rack, turn on the broiler and broil the wings for 3 to 6 minutes, watching them closely.
- Grilling Method: Prepare the sauce as described in the oven method.
- Toss the wings in some neutral oil to keep from sticking (not necessary if you are baking them in the oven).
- Heat your grill, leaving one side cooler for indirect cooking.
- Cook the wings on the cool side of the grill and cover. Check the wings and turn them a couple of times, until the wings are cooked through, about 15 to 20 minutes.
- Add the wings to the bowl of sauce, and toss them to coat. Put the wings on the hot part of the grill and cook uncovered, turning the wings to evenly brown.
- Combine the sour cream, lime juice, cilantro, and salt, and refrigerate until ready to serve.

DeleteBe still, my beating heart! These sound fabulous. I bet they'd work with reconstituted dried chipotles too (we only have dried chipotles, not canned in adobo sauce)
ReplyDeleteCanned chipotles are actually reconstituted, so this would work. If you have access to liquid smoke, mix a tiny bit with tomato sauce, apple cider vinegar, cumin, oregano, garlic, and some cayenne, and soak the dried chipotles in it. I'm pretty sure this would work.
