These Peppermint Patty Brownie Bites, stuffed with York Peppermint Patties, are such a fun treat!
Peppermint Patties are on my short list of favorite candies. After all, chocolate and mint are pretty much a perfect pairing.
These little brownie bites are pretty easy to make and the minty white filling looks so pretty in the middle of these brownies. If you have little kids in your life, you should make these. They will love them.
When I first started posting recipes, one of my first desserts was (were?) these Twix Candy Bar Brownies. I recently made them again, and decided that, even though they were stuffed with candy, they weren't just another "surprise inside" dessert fad... and the same goes with these brownies. Plus, they're really good.
Ingredients in These Peppermint Brownie Bites:
Unsweetened Chocolate: You will need to coarsely chop it and then melt it in the microwave with 50 percent power.
Unsalted Butter: Cut it into small Cubes.
Eggs: You will need three large eggs so that the brownie bites have a cake-like texture.
From the Pantry: Granulated sugar, salt, unbleached all-purpose flour, and pure vanilla extract.
York Peppermint Patties: Unwrapped.
Alternatively, you can also use a boxed brownie mix. Add an extra egg for a more cakey brownie and use a 9 inch square pan rather than an 8 inch pan. I tried it, and the resulting brownies were delicious, but a little more "free form." The peppermint patties tended to lose more of their shape and bubble up more. I'm sure it's due to the gooey nature of brownie batter.
However, the brownie mix version will produce that shiny and crackly brownie top. Either way, they were delicious.

Equipment You May Need:
Eight inch Square Cake Pan: I prefer to use a pan with squared sides and corners.
Foil or Parchment Paper: I'm a big fan of King Arthur's Parchment Baking Sheets.
Tip for Success:
When you make these, be sure to wait until the brownies cool, at least two hours, so that the candy can rest, set up, and regain its shape. Otherwise, the middles will pour out and you will have hollow brownies.
You can cut these brownies into larger or smaller sizes. For traditionally sized brownies, cut them into 16 pieces. For bites, you can cut them into smaller squares.

Peppermint Patty Brownie Bites

Ingredients
- 4 ounces coarsely chopped unsweetened chocolate
- 6 ounces (3/4 cup) unsalted butter, cubed
- 1 1/4 cups granulated sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 4 1/2 ounces (1 cup) unbleached all purpose flour
- 16 (1 1/2 inch) York Peppermint Patties, unwrapped
Instructions
- Preheat the oven to 350 degrees F with a rack in the middle.
- Line an 8 inch by 8 inch cake pan with foil or parchment paper, leaving some of the foil or paper overhanging the edges of the pan. Spray the foil or paper with spray oil.
- In a medium bowl, microwave the chocolate and butter at 50% power for one minute increments, stirring in between each time. When the butter is fully melted, keep stirring until the chocolate is melted. Let the mixture cool slightly before adding the rest of the ingredients.
- Whisk in the sugar, and then add the eggs, vanilla, and salt. Fold in the flour until just mixed in.
- Spread half of the brownie mixture into the pan, and place the candies evenly over the top of the batter in a 4x4 pattern. Spread the rest of the batter over the top of the candies to completely cover.
- Bake the brownies for 30 minutes. Cool the brownies in the pan for 2 hours on a wire rack before cutting.

Oh my, Karen, I would be afraid to have these in the house. Definitely a recipe to take to a party or potluck so I only eat one of them instead of one pan of them LOL.
