This pear salsa is also delicious spooned over fish fillets, such as halibut or salmon.
I used Asian pears in this salsa. They are the pears that look like apples, and often come partially wrapped in a stretchy styrofoam mesh to protect them from bruises. I like them because they are both crunchy and juicy, with a mild flavor.
You can also use Bosc pears, which are also crunchy. For any other type of pear, such as Anjou or Bartlett, use pears that are firm and underripe so they will hold their shape.
This recipe has been slightly adapted from the book Mark Bittman's Kitchen Matrix: More than 700 Simple Recipes and Techniques to Mix and Match for Endless Possibilities. Over 700 recipes in 300 pages! This recipe came from the section, Pears +10 Ways. The section is loaded with delicious looking pear salads, including spinach, iceberg, fennel, endive, romaine, arugula, or jicama. There are salads with prosciutto, Stilton, Parmesan, goat cheese, oranges, or ginger. All of the salads look delicious, but this salsa called my name.
I'm spending a year cooking through sections of the book with Wendy of A Day in the Life on The Farm and Camilla of Culinary Adventures with Camilla. Keep an eye out every Tuesday for our weekly posts. After the recipe, be sure to check out the pear recipes that Wendy and Camilla made.

Karen's Kitchen Stories
I completely fumbled the ball on this month's challenge but the end result was delicious. I will have to go back to this section soon though because that salsa is calling my name too.
