What I love about this recipe for chocolate cherry chunk cookies is that it is "small batch." It yields just eight cookies, which means that I won't be finishing off three dozen cookies in one sitting.
I love the fact that this recipe produces only a few cookies because I can't resist chocolate desserts and would have a hard time resisting a full batch. Small batch recipes save me from myself!
We packed these cookies in our grandkids' lunches, hoping that they would be thrilled with homemade treats. While my older grandson had no problem with these cookies, the youngest ate them, but avoided the cherries.
Evidently, he mistook them for raisins, which he dislikes. This is the same kid who likes sushi, lettuce, and broccoli. He cracks me up.
Chocolate and cherry pretty much belong together, as do chocolate and mint, chocolate and peanut butter, and chocolate and hazelnut. How does chocolate choose whom to marry?

Hint:
One of the hardest parts of measuring ingredients for small batch baking is measuring the eggs. If you dip your measuring the spoon into the egg, you'll likely end up with less than you want. It's better to pour some of the egg into the measuring spoon. Adding a tiny bit of salt to the eggs also makes them easier to measure.

Chocolate Cherry Chunk Cookies
ingredients
- 3/4 ounces unsweetened chocolate, finely chopped
- 1/2 ounce semisweet chocolate, finely chopped
- 1 1/2 tablespoons butter
- 3 tablespoons (1 ounce) (31 grams) all purpose flour
- 1/8 teaspoon baking powder
- Pinch of salt
- 1 tablespoon well beaten egg
- 1/4 cup plus 1 tablespoon sugar
- 1/2 teaspoon vanilla
- 1/4 cup (40 grams) semisweet chocolate chips
- 1/4 cups (34 grams) dried cherries
instructions
- In a microwave safe glass bowl, add the chocolates and butter. Microwave at medium power for about 90 seconds. Stir until smooth.
- In a small bowl, whisk together the flour, baking powder, and salt.
- In a small and deep mixing bowl, mix the egg and sugar with a hand mixer on low speed. Increase the speed to medium and beat for about a minute, until pale in color. Add the chocolate mixture and vanilla and mix on low speed until smooth. Stir in the flour mixture until just combined. Add the chips and cherries. Cover the dough with plastic wrap and refrigerate for about 20 minutes, until firm.
- Heat the oven to 350 degrees F and line a baking sheet with parchment. Divide the dough into 8 equal pieces and drop each piece onto the baking sheet, spaced about 3 inches apart.
- Bake for about 10 minutes. Slide the parchment, cookies and all, onto a wire rack and let cool completely.
