These whole wheat, corn, cheddar, and green chili muffins combine the flavors of corn, cheese, and chilies into a wonderfully savory treat.
These muffins include lots of corn, cheese, and chilies. The muffins are light and fluffy, and are topped with more cheese and chilies that melt into the tops of the muffins while they are baking. So good.
Along with the corn meal, these muffins include whole wheat flour. You can use either traditional or white whole wheat interchangeably. I used standard whole wheat flour in these muffins and was super happy with the results.
Alternatives to the fresh buttermilk in these muffins:
I used fresh buttermilk in these muffins. Fortunately, I also needed buttermilk for a fish dish I was making so I had no problem buying a quart of buttermilk. If you don't want to buy that much buttermilk, you can substitute whole milk and these muffins will turn out just fine.
Another option is to use buttermilk powder. Just add the powder to the dry ingredients and the equivalent amount of water to the wet ingredients. I do this a lot with recipes that call for buttermilk.
There is also the option of stirring a tablespoon of lemon juice or vinegar into each cup of milk to substitute for the buttermilk. Easy peasy.
We were super happy with these muffins. They are amazing warmed and spread with a little butter. Plus, you can feel pretty good about getting in your whole grains!

Whole Wheat, Corn, Cheddar, and Green Chili Muffins
ingredients
- 4 7/8 ounces (1 cup) whole grain yellow corn meal
- 2 ounces (1/2 cup) whole wheat flour
- 3 1/8 ounces (3/4 cup) unbleached all purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon chili powder
- 1/8 teaspoon cayenne pepper
- 1 large egg
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 5 3/4 ounces (1 cup) frozen corn kernels, thawed
- 1-4 ounce can diced green chilies, drained and divided (2 tablespoons reserved)
- 3 ounces (3/4 cup) grated sharp Cheddar cheese, divided
instructions
- Heat the oven to 400 degrees F.
- Grease a 12-cup muffin tin or line it with paper liners and spray the liners with spray oil.
- in a medium bowl, whisk together the cornmeal, flours, sugar, baking powder, salt, chili powder, and cayenne powder.
- In another medium bowl, whisk together the egg, buttermilk, and oil. Add the corn and the chilies (except for the reserved chilies).
- Add the wet ingredients to the dry ingredients and fold until most of the dry ingredients are incorporated. Fold in 1/2 cup of the cheese.
- Using a cookie scoop or 1/4 cup measuring cup, divide the batter among the muffin cups.
- Top the batter with 1/2 teaspoon of the remaining cheese and 1/2 teaspoon of the remaining chilies.
- Bake the muffins for 20 minutes, until a toothpick comes out clean.
- Let the muffins cool in the pan for 5 minutes, and then turn them out onto a wire rack to cool completely.
