This Cheddar Bacon Chive Quick Bread is loaded with lots of chopped bacon, a cup of cheddar cheese, and a big handful of chopped chives.
It's bacon-y, cheesy, and oniony. All kinds of goodness.
What are quick breads?
Quick breads are breads that are leavened with baking soda and/or baking powder. Essentially, they do not include yeast or sourdough, and do not require a first and second rise before baking.
The category typically includes such breads as zucchini bread, banana bread, and soda bread. Basically, it's muffins baked in a bread pan.
The texture is more tender because you don't really develop the flour's gluten. In fact, the goal is to handle the batter as gently as possible.
Before the discovery of baking powder and baking soda, even cakes were made with yeast. Today, cakes baked with yeast are pretty rare, but some examples of old fashioned cakes using yeast include this yeasted pound cake, this apple kuchen, and this lardy cake.

This cheddar bacon chive bread is filled with cheese and bacon and is delicious sliced and served straight from the pan.
It's also exceptionally delicious sliced, toasted, and buttered, something that never occurred to me until I took slices of this bread to work. I shared it with my colleagues who promptly popped the slices in the toaster oven, sending the aroma of toasted cheddar throughout the office. Oh man!
As much as I love yeasty bread, this cheesy quick bread was pretty darn delicious.
Suggested substitutions for the add-ins:
- For the bacon, you can substitute cooked pancetta cubes, ham, or crisped prosciutto.
- If you are vegetarian, chopped sun dried tomatoes would be a great substitution for the bacon, along with basil for the chives.
- To add a French flair to this bread, substitute some saucisson or jambon sec for the bacon and some Comté or Gruyère for the cheese.
- For the milk in this recipe, you can substitute buttermilk. You can also dilute any leftover sour cream or yogurt you have in the fridge with some milk and add it, by volume, to the batter.

There's something about their being made in the USA, those ridges, and the silicone coating. I've had the one in the photo for nine years (they're great for freezing ice cream too.)

Cheddar Bacon Chive Quick Bread
Yield: 10 servings
This cheddar bacon chive quick bread will have you doing back flips over its cheesy bacon-y goodness.
ingredients:
- 2 1/4 cups (12 ounces) all purpose flour
- 1 tablespoon baking powder
- 1 teaspoon kosher salt
- 3 tablespoons finely sliced chives
- 3 large eggs, room temperature
- 1 1/2 cups milk, room temperature
- 6 tablespoons neutral oil
- 6 slices of bacon, cooked, drained, and chopped
- 1 cup (4 ounces) shredded cheddar cheese
instructions:
How to cook Cheddar Bacon Chive Quick Bread
- Heat your oven to 350 degrees F and spray a 9 inch by 5 inch loaf pan with spray oil. Line the bottom and sides with a parchment sling.
- In a large bowl, whisk together the flour, baking powder, salt, and chives
- In another bowl, whisk together the eggs, milk, and oil.
- Pour the wet ingredients into the dry ingredients and mix with a rubber spatula or wooden spoon until just mixed together.
- Stir in the bacon and cheese until just combined.
- Pour/scrape the batter into the loaf pan and smooth the top.
- Bake the loaf for 40 to 45 minutes, until a toothpick inserted in the center comes out with just a few crumbs. If the bread is getting too brown, you can tent it with foil while baking.
- Let the bread cool in the pan for 5 minutes and then remove it from the pan and cool it on a wire rack.

DeleteKaren have you ever thought of adding yeast to this recipe. Nothing wrong with it as is but I just thought it might make it lighter.
ReplyDeleteI've definitely added cheddar, bacon, and chives to lean yeasted breads and loved the results. I'm sure they would be good in a challah or brioche dough too, kind of like a casatiello. This dough probably has too much liquid to flour ratio between the milk and eggs for a decent yeasted bread.
