Blackberry Cobbler

Blackberry cobbler is an easy way to make a quick summer dessert when you have a lot of blackberries and don't have the time to make a pie!

Instead of a having a pie crust, a cobbler is dotted with a biscuit topping that bakes along with the blackberry filling. It's great for potlucks or impromptu dinner parties. I made this for a last minute Independence Day dinner and it was a big hit.

This blackberry cobbler is delicious topped with vanilla ice cream (my favorite) or whipped cream. It's wonderful served warm or at room temperature, and leftovers will last at least three days in the refrigerator.

Ingredients you will need to make Blackberry Cobbler:


  • Fresh or frozen blackberries. If you use frozen blackberries, you might need to increase the cornstarch. 
  • Sugar
  • Lemon juice
  • Cinnamon
  • Vanilla extract
  • Cornstarch
  • Flour
  • Butter
  • Buttermilk
  • Salt
  • Baking Powder

How do you make this blackberry cobbler?


First, you make the blackberry filling. You cook about two thirds of the blackberries in the sugar, water, and cornstarch with the lemon juice, vanilla, and cinnamon. 

Next, you pour the cooked blackberries into an 8-inch pan, and then add more fresh blackberries to the pan. 

Next, you make the dough for biscuit topping. To create the dough, pulse the dry ingredients and the cold butter in the bowl of a food processor until you have what looks like a coarse crumbly mixture. Slowly add the buttermilk while continuing to pulse until the dough just comes together. It should still be fairly crumbly. 

Finally, break the dough into small and/or larger pieces to form a "cobblestone" pattern on top of the blackberries and bake the cobbler. I used varying sizes, but you could also divide the dough into 9 larger pieces and place them in a 3x3 pattern on top for single servings.

ingredients:

  • 6 cups blackberries, divided
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • !/2 teaspoon vanilla
  • 3 to 4 tablespoons cornstarch
  • 3/4 cup water
  • 1 1/2 cups all purpose flour
  • 1 tablespoon granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup cold butter, cut into small cubes
  • 1/3 to 1/2 cup buttermilk

How to cook Blackberry Cobbler

  1. Heat the oven to 350 degrees F. Spray an 8 inch by 8 inch square pan with spray oil. 
  2. In a saucepan, combine 4 cups of the blackberries, the sugar, lemon juice, and vanilla, and bring the mixture to a boil. 
  3. In a small bowl, mix the cornstarch, and water, and add it to the pan. Cook, stirring constantly, until the mixture has thickened and reduced, 4 to 6 minutes. 
  4. Pour the mixture into the prepared pan. 
  5. Add the remaining two cups of blackberries to the pan and stir. 
  6. In the bowl of a food processor, pulse the flour, tablespoon of sugar, baking powder, and salt until combined. 
  7. Add the butter and pulse until the mixture is pebbly. 
  8. Slowly add the buttermilk and pulse until the dough just comes together. 
  9. Drop pieces of the dough on top of the blackberry mixture. 
  10. Bake the cobbler for 30 to 35 minutes, until the biscuit topping is golden and the berries are bubbly.
