This watermelon salad with mint and lime juice is so juicy and fresh. It is the perfect salad for picnics, barbecues, and tapas parties.
I love this time of year when watermelon appears in the grocery store. Last weekend, our neighborhood store had cartons of watermelons both in front of the store and throughout the store in preparation for Independence Day. It definitely feels like summer.
Watermelon has always been one of my favorite summer fruits. I love how it is both crunchy and juicy at the same time.
In this salad, watermelon pairs so well with the mint and the lime juice. There is also a bit of kosher salt and a tablespoon of rum in this salad, just to make it interesting (and delicious).

Shopping List for this Watermelon Salad with Mint and Lime:
- One "personal" seedless watermelon or 8 cups of 2 inch watermelon cubes from a larger watermelon.
- 1/4 cup freshly squeezed lime juice
- 2 tablespoons dark rum. If you prefer to not include the rum, you can skip it, or you can add a half teaspoon of rum extract.
- 1/4 teaspoon kosher salt
- Generous pinch of cayenne pepper
- 1/2 cup of fresh mint leaves, thinly sliced
How to make Watermelon Salad with Mint and Lime
Making this watermelon salad with mint and lime is super easy.
- First, you cut a personal-sized watermelon into two inch cubes.
- Next, you toss the watermelon with freshly squeezed lime juice, rum, and kosher salt.
- Let the watermelon marinate in the lime juice mixture for at least 15 minutes and up to 6 hours.
- When ready to serve, toss the watermelon with the sliced mint leaves.
Watermelon Salad Variations
If you want to get creative, you can toss in some crumbled feta cheese, some sliced cherry tomatoes, and even some thinly sliced red onions or shallots.
By the way, leftovers last at least three days.

- 8 cups 2 inch cubes of watermelon
- 1/4 cup fresh lime juice
- 2 tablespoons dark rum
- 1/4 teaspoon kosher salt
- Pinch of cayenne pepper
- 1/2 cup mint leaves, thinly sliced

How to cook Watermelon and Mint Salad with Lime
- In a large bowl, toss the watermelon cubes with the lime juice, rum, salt, and cayenne pepper.
- Cover the bowl and refrigerate for at least an hour and up to 6 hours.
- When ready to serve, toss the salad with the sliced mint leaves.
