This Tater Tot Breakfast Casserole is so easy to make, and it makes such great leftovers. Plus, it's so tasty.
I adore Tater Tots. I love them in a good hot dish/cowboy casserole, and they add so much to make-ahead freezer breakfast burritos.
I know that there are recipes out there for homemade versions, but it seems like a lot of work to replace something that is already so delicious. Sometimes you just have to respect the original!
Tater Tot Breakfast Casserole Shopping List:
- Pork breakfast sausage - I used Farmer John's sausage links, which I cut into small pieces and cooked in my cast iron skillet. You can also use bulk sausage or any spicy mixed ground meat.
- You will definitely need eggs.
- Shredded cheddar cheese. I used sharp white cheddar cheese. I bet smoked Gouda would be amazing as well.
- Milk, salt, and pepper.
- About a 32 ounce bag of Tater Tots. Note: You will have a few Tater Tots left over. Not a bad thing.
Variations on this Breakfast Casserole Recipe:
You can also dress this breakfast casserole up by sautéing some veggies with the sausage if you like. You can also make this casserole burrito or tacolicious by substituting taco meat or Mexican chorizo for the sausage and adding some sautéed jalapeños.
Just top a slice with some salsa and wrap it in a tortilla for a delicious breakfast burrito. The variations are endless.
I made this Tater Tot breakfast casserole in a 12 inch cast iron frying pan. If you don't have one, you can use any oven proof 12 inch skillet. I also like this stainless steel skillet for baking in the oven.
Even though there are only two of us, we managed to finish off this Tater Tot breakfast casserole in about three days. It was that good.
Tip for Making This Tater Tot Breakfast Casserole:
This is a really easy-peasy recipe. My one tip is to broil the casserole after baking to crisp up the potatoes. You don't have to move the casserole closer to the broiler. Just turn on the broiler after baking and watch closely.

Breakfast Tater Tot Casserole with Cheddar and Sausage
Yield: 8 Servings
This Breakfast Tater Tot Casserole is loaded with breakfast sausage, cheddar cheese, and eggs all topped with crispy Tater Tots.
ingredients:
- 3/4 pound pork breakfast sausage
- 8 large eggs
- 1/2 cup whole milk
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 6 1/2 ounces sharp cheddar cheese, shredded, plus more for sprinkling
- 1 32 ounce bag of frozen Tater Tots
- Thinly sliced scallions for serving

How to cook Breakfast Tater Tot Casserole with Cheddar and Sausage
- Heat your oven to 350 degrees F.
- Cook the sausage in an ovenproof 12 inch skillet (I used cast iron) over medium heat until just fully cooked. Remove from the heat.
- Sprinkle the cheese over the sausage.
- In a bowl, whisk the eggs, milk, salt, and pepper together and pour the mixture over the sausage and cheese.
- Arrange the Tater Tots over the top of the mixture and place the pan in the oven to bake for 35 to 40 minutes.
- Sprinkle the top with some extra cheese and broil for about 5 minutes, watching closely.
