This baby greens salad with pomegranate, blue cheese, and pecans is refreshing and light, and showcases the fall flavors of pecans and pomegranate. It's similar in looks to this fennel, pomegranate, and arugula salad, but with an entirely different flavor.
The pomegranate vinaigrette is tart and tangy and is delicious with the blue cheese and pecans in the salad.
Shopping List for this Pomegranate, Blue Cheese, and Pecan Salad:
- Mixed baby greens
- Baby arugula
- Pomegranate seeds from one pomegranate
- Blue cheese. You can use gorgonzola or any crumbly blue cheese. I actually used cambozola, which is a creamy blue cheese.
- The dressing includes pomegranate juice, champagne vinegar, chopped shallot, honey, and olive oil.
- Finally, I topped this salad with Sweet and Spicy pecans from Millican Pecan, one or our Fall Flavors sponsors. So good. You can also roast and chop their gorgeous pecan halves if you prefer.
I made some pecan brittle this weekend with some of the pecan halves they sent me and it was delicious (recipe coming soon). I also have big plans for their creamy pecan butter.

This baby greens salad with pomegranate, blue cheese, and pecans is refreshing and light, and showcases the fall flavors of pecans and pomegranate.
ingredients:
For the Pomegranate Vinaigrette
- 2 1/2 tablespoons pomegranate juice
- 1 1/2 tablespoons champagne vinegar
- 1 1/2 teaspoons minced shallot
- 1 1/2 teaspoons honey
- 2 1/2 tablespoons extra virgin olive oil
- Pinch each of salt and pepper
For the Salad
- 2 1/2 cups mixed baby greens
- 1 1/2 cups baby arugula
- 1/2 cup pomegranate seeds
- 1/2 cup pecan pieces. I used Sweet and Spicy from Millican Pecan.
- 1/4 cup crumbled blue cheese

How to cook Baby Greens Salad with Pomegranate, Blue Cheese, and Pecans Recipe
- Combine the vinaigrette ingredients in a small lidded container and shake to combine.
- Toss the greens in a large bowl and sprinkle the pomegranate seeds, pecan pieces, and blue cheese over the top.
- Drizzle with the vinaigrette and serve.

Loving those sweet and spicy pecans. Put them out with a charcuterie tray during family dinner the other night and they were gone in a snap. I actually served up a very similar salad that night for dinner using blood oranges instead of pomegranate. Your salad is gorgeous.
