Individual Tater Tot Breakfast Casserole Muffins

These Tater Tot Breakfast Casserole Muffins are an easy to make portable breakfast. Just crack an egg over crispy tater tots in a muffin tin, add some cheese, bacon, sliced cherry tomatoes, and some spinach, and bake.

These breakfast casserole muffins take baked eggs to a whole new level.

These Tater Tot mini breakfast casseroles are kind of the holy grail of breakfast casseroles made portable. They include all of the best parts of a breakfast casserole, potatoes, cheese, eggs, and bacon.

The one specialty item you will need to make these little breakfast casseroles is a jumbo muffin pan (affiliate link). I actually bought these pans just to make this breakfast casserole.

How to make these individual Tater Tot breakfast casserole muffins:


First, you bake the Tater Tots according to the package directions. I actually baked them in the muffin tin. Next, you smash the Tater Tots down into the muffin tin cavities to form a base. 

Next, you crack an egg over the crispy Tater Tots, sprinkle the tops of the eggs with cooked bacon and shredded cheese, and top with sliced tomatoes and spinach. The tomatoes and spinach are optional. In fact, I made one without them for a picky eater. 

Finally, you bake the breakfast casserole muffins in a 400 degree F oven for just 11 minutes, until the whites of the eggs are set.

These little breakfast "muffin" casseroles were so good.

What's great about this recipe is that you have lots of flexibility. You can substitute breakfast sausage, diced ham, or cooked chorizo for the bacon.

I used cheddar for the cheese in these mini breakfast casseroles, but you can use Monterey Jack or pepper Jack. Mozzarella cheese would also work.

In fact, there are so many possibilities! I'm imagining a pizza version with pepperoni and pizza sauce.

What to do with leftover Individual Tater Tot Breakfast Casserole Muffins: 


These individual breakfast casseroles are also a great make-ahead and portable breakfast for busy days. You can either microwave or bake leftovers in the toaster oven. They are great for taking to work when you don't have enough time to have breakfast at home.

ingredients:

  • 36 individual Tater Tots
  • 1/8 teaspoon granulated onion
  • Salt and pepper to taste
  • 6 eggs, room temperature
  • 1/2 cup shredded cheddar cheese
  • 6 slices bacon, cooked and chopped
  • 6 cherry tomatoes, sliced
  • 3 tablespoons frozen spinach, thawed and squeezed dry

instructions:

How to cook Individual Tater Tot Breakfast Casserole Muffins

  1. Bake the Tater Tots according the package directions (25 minutes at 450 degrees F). Reduce the oven heat to 400 degrees F.
  2. Place 6 Tater Tots each in the bottom of 6 cavities of a jumbo muffin pan. Press them down with a spoon to form a cup. Sprinkle the Tater Tots with granulated onion, salt, and pepper.
  3. Crack an egg over each nest of Tater Tots.
  4. Divide the shredded cheese among the muffin pan cavities, and add the shredded bacon.
  5. Top with the tomato slices and spinach.
  6. Sprinkle with more salt and pepper to taste.
  7. Bake for about 11 minutes, until the egg whites are set.

    No bacon, tomato, or spinach in house.
    Had turkey and ham left over for soups.
    Added dash of basil, paprika, and parsley.

    1. You can use fresh but you would have to cook it first to reduce it down. It shrinks a lot!
