Mix the ingredients for these pumpkin overnight oats with flax seeds, crystalized ginger, and maple syrup in a jar, and place them in the refrigerator overnight. The next morning you will have a filling and nutritious grab-and-go breakfast.
After having my share of breakfast burritos and huevos rancheros while on vacation a couple of weeks ago, I felt rather virtuous having these overnight oats for breakfast after returning home.
These pumpkin overnight oats are a great way to use up leftover pumpkin puree (or you could just make this pumpkin martini, I won't judge).
The first time I tried overnight oats I made this version with honey and raspberries. It was soooo good! In fact, making these on Sunday night for Monday morning became a regular routine.
These overnight oats are especially delicious topped with a bit of whipped cream and a drizzle of caramel.
How to Make Pumpkin Ginger Overnight Oats:
First, you mix together all of the ingredients.
Next, you pour the ingredients into a jar or glass, cover, and refrigerate overnight.
Finally, top the oats with the topping of your choice, such as whipped cream, caramel, or if you're virtuous, some toasted pumpkin seeds.
These overnight oats are not too sweet, unless of course you top them with caramel sauce.

Yield: 2 servings
Pumpkin Ginger Overnight Oats, with flax seeds and maple syrup, are just about the easiest nutritious and portable breakfast you can make.
ingredients:
- 1/2 cup rolled oats
- 2/3 cup milk
- 1/4 cup pumpkin puree
- 1/3 cup plain yogurt
- 1 tablespoon ground flax seeds
- 1 tablespoon chopped crystallized ginger
- 2 teaspoons maple syrup
- Pinch of pumpkin or apple pie spice
- Pinch of salt
- Optional toppings: Whipped cream, caramel syrup, and/or toasted pumpkin seeds.

How to cook Pumpkin Overnight Oats with Flax Seeds and Ginger
- Stir together all of the ingredients, except the toppings, and place them in two jelly jars or lidded glasses.
- Refrigerate overnight.
- Add your favorite toppings.
