Green Herb Dip

When your guests arrive for your New Year's Eve party (or any cocktail or dinner party), hand your guests a cocktail and set out this green herb dip with some crackers and veggies.

This green herb dip is also a great way to gather up the bits and pieces of herbs and veggies you've got in your veggie bin in the refrigerator and turn them into sophisticated and tasty treat.

I've included scallions, Italian parsley, and fresh dill in this herb dip, but you can play around with it with whatever you have on hand. You could add a little garlic, maybe some chives, and even minced jalapeño.

P.S. If you're a fan of veggie dips, you should also check out roasted onion dipcreamy spinach dip, garlic and vegetable cheese spread, or lightened up green goddess dip, which is also loaded with herbs.

Ingredients you will need for this green herb dip:

  • One package of cream cheese. I used full fat cream cheese, but a low fat version would work fine in this recipe.
  • 1/2 cup sour cream.
  • 1/2 cup of mayonnaise. If you are not a fan of mayonnaise based dips, try this garlic and vegetable cheese spread. It includes a cream cheese and sour cream base, without the mayonnaise.
  • Chopped scallions, chopped flat-leaf parsley, and chopped fresh dill.
  • Salt and freshly ground black pepper.

How to make this green herb dip:

First, make sure your cream cheese is room temperature.

Once you have room temperature cream cheese, mix it with the sour cream and mayonnaise in the bowl of a food processor.

Finally, add in the herbs and salt and pepper and pulse a few more times until just blended.

This dip is excellent served with crackers, pita chips, and/or veggies. It was a huge hit with cucumber slices.
