The flavors of fresh pureed cucumber and freshly squeezed lime juice give this cucumber margarita such a refreshing flavor. It's kind of like a spa margarita, right? In fact, without any added sugar, you could probably call it a "skinny" margarita.
This recipe is for two cocktails, but you can easily scale it to make a pitcher of margaritas for a crowd.
I love trying margaritas with different ingredients. In fact, I have nine margarita recipes featured on this blog with ingredients ranging from rose water, tangelos, Campari, fresh figs, Aperol and Luxardo, mango and jalapeño, strawberry papaya, fresh blackberries, and passion fruit.
Cucumber Margarita Ingredients:
- Tequila: I used silver tequila in this cucumber margarita. Feel free to experiment with reposado or even mescal.
- Orange/Citrus Liqueur: I used Cointreau, but you can use Triple Sec. Grand Marnier would also be delicious but will add a deeper flavor.
- Freshly-squeezed lime juice: I used Bearss limes from our lime tree because they are so juicy. To extract the juice, I love using this citrus squeezer (affiliate link). You'll get every drop of juice from your lemons and limes.
- Persian Cucumbers: These are great for pureeing because they have very few seeds. You can also use English cucumbers. In a pinch, peel and de-seed a "regular" cucumber to add to your margarita.
- Garnishes: If you like your margaritas spicy, slide a couple of jalapeño slices into your margarita. You can also garnish this margarita with a few sprigs of cilantro and cucumber slices. I salted the rim of the glasses, but if you prefer, just sprinkle a pinch of kosher salt or flaked sea salt over the top of the finished cocktail.
How to Make a Cucumber Margarita:
First, puree some diced cucumber and lime juice with an immersion blender.
Next, add the mixture to a cocktail shaker filled with ice and add tequila and cointreau. Shake the ingredients and strain over a salt-rimmed ice-filled glass.
Finally, garnish with a cucumber slice, a jalapeño slice, and a sprig of cilantro.
What to serve with this cucumber margarita:
I believe a margarita goes with just about anything, but I do have some pretty amazing Mexican themed recipes. My suggestions include:
- Grilled pineapple and red onion salsa
- Pear salsa
- Roasted tri-color pepper salsa
- Steak adobado tacos
- Pork pozole verde
- Old school hard shell tacos
- Crispy snack shack shrimp tacos
Did you know that the third weekend in February is national margarita weekend? Ellen of Family Around the Table is hosting a margarita event. I'm excited to see all of the margarita and margarita-themed recipes everyone has created.
