Meatloaf belongs on the list of ultimate comfort foods. Pair it with mashed potatoes and some succotash, and you have an old-timey plate of good memories. In fact, one of my most popular posts on this blog is this barbecue meatloaf.
This turkey meatloaf has an extra kick. It is spiced with Sriracha both in the meat mixture as well as in the ketchup glaze.
While this meatloaf is made with ground turkey, if you want to, you can substitute ground beef, or a combination of ground beef, pork, and/or lamb.
This is my first try at making meatloaf in a pressure cooker, and I'm super happy with the results. I also love that you can wrap up the potatoes and then stack them in the pressure cooker under the meatloaf and prepare and cook an entire meal all at once and in under and hour, including prep time.
How to Make Instant Pot Meatloaf
First, you mix the ingredients for the meatloaf, which include ground turkey, onions, panko bread crumbs, eggs, parsley, garlic, oregano, cumin, and Sriracha.
Next, you press the meatloaf mixture into a 7-inch springform pan (affiliate link). Alternatively, if you don't have a 7-inch springform pan, you can press the meatloaf mixture into a 7 inch round and wrap it in foil.
To make the potatoes, you cut scrubbed russet potatoes into wedges and place them in foil packets that you stack below the meatloaf in the springform pan. The potatoes cook at the same time as the meatloaf.
Once you've pressure cooked the meatloaf and potatoes, you coat the meatloaf with a ketchup Sriracha mixture an broil the meatloaf.
Finally, you smash the potato wedges with a fork, add some butter, salt, and pepper, and serve them with the meatloaf.
Serve this turkey meatloaf with the potatoes along with a salad or mixed vegetables, and dinner rolls... comfort food on a plate.
Cooking with an Instant Pot or Multi-Cooker:
I bought an Instant Pot about four years ago but I have not really used it to its full potential, which is why I was excited to join Multicooker Monday, a group started by Sue of Palatable Pastime.
I've yet to try most of the functions other than pressure cooking, but I'm looking forward to it. For example, I understand that you can use the yogurt function for proofing bread!

Instant Pot Turkey Meatloaf with Potato Wedges
This Instant Pot turkey meatloaf with potato wedges recipe, made with the pressure cooker function, will help you get meatloaf and potatoes on the table in less than an hour.

Instant Pot Turkey Meatloaf with Potato Wedges
Yield: 4 servings
This Instant Pot turkey meatloaf with potato wedges takes an old school comfort food combination of meatloaf and potatoes and spices it up with Sriracha.
ingredients:
- 2 medium russet potatoes (about 1 1/4 pounds), washed and quartered lengthwise, and poked all over with a fork.
- Salt
- 1 pound ground turkey
- 1 small yellow onion, finely diced
- 3/4 cup panko bread crumbs
- 2 large eggs
- 1/4 cup finely chopped flat-leaf parsley
- 1 1/2 tablespoons Sriracha sauce
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- 1/4 teaspoon ground cumin
- 2 tablespoons ketchup
- Butter and scallions for serving the potatoes

How to cook Instant Pot Turkey Meatloaf with Potato Wedges
- Oil the interior of a 7 inch springform pan.
- Pour 1 1/2 cups of water on the bottom of an electric pressure cooker.
- Place the steamer rack in the pressure cooker.
- Sprinkle the potato wedges with salt and make two foil packets of the potato wedges. Be sure that the packets are in a single layer and flat.
- Stack the foil packets on top of each other into the pressure cooker.
- Mix the ground turkey, onions, panko, egg, parsley, 1/2 tablespoon of the Sriracha, garlic, 1 teaspoon of salt, oregano, and cumin. Press the mixture into the prepared springform pan.
- Cover the pan with foil.
- Place the pan on top of the potato packets.
- Cook on high pressure for 35 minutes. Release the pressure manually.
- Mix the ketchup with the rest of the Sriracha and brush it over the meatloaf after removing the pan from the pressure cooker, removing the foil, and releasing the sides of the pan. Place the meatloaf onto a quarter sheet pan.
- Heat the broiler and broil the meatloaf for about 2 to 4 minutes.
- Slightly mash the potatoes with a fork and add some butter, salt, and scallions.
- Serve the potatoes with the meatloaf.
