The strawberry stands are beginning to appear around here. They pop up magically in any available vacant lot in March and typically last through late May to early June. These fresh strawberries sold in strawberry stands typically come from farms just north of us, in Ventura County.
In March, we might buy a basket of strawberries every weekend, but by May, when they are at their juiciest, we will buy a flat or two of strawberries. These strawberries are so much better than any we can find at the grocery store.
Plus, the strawberry stands usually give you a punch card where, if you have all of the squares punched, you can earn three free baskets of strawberries. You have to give it to the worker at the strawberry stand and wait for them to mail you a coupon only good for the current season. It's always a gamble as to when strawberry season will end. Will the coupon arrive before the stands close?
Oh, the drama ...
Ingredients in this berry pie:
This air fryer mini berry pie includes fresh Ventura County strawberries, plus raspberries, blueberries, and blackberries. To thicken the pie filling, you will also need cornstarch, and to sweeten it, you will need sugar. Add a bit of lemon zest for brightness.
This berry pie does not have a bottom crust, so it's similar to a cobbler, but with a pie crust topping. You'll definitely need to serve this with a spoon.
How to make a mini berry pie in the air fryer:
First, you will need to simmer a third of the berries with the sugar and the cornstarch. Next, you will need to mix in the rest of the fresh berries, the lemon zest, and the vanilla, and add the mixture to a 6 inch pie dish.
After that, top the pie dish with pie dough, crimp it, brush it with an egg wash, and bake it in your air fryer for 15 minutes. Yes, pie in 15 minutes!
For the pie crust, I used Pillsbury refrigerated pre-made pie crust. You can also make your own homemade recipe.
For the pan, I used this 6 inch glass pie pan (affiliate link), but any 5 to 6 inch pie pan will do. They are small enough to fit in an air fryer basket and still give you room to lift it out of the air fryer.
I used this Philips air fryer to make this pie (affiliate link). It doesn't require pre-heating and it's super easy to use and clean. The only negative is that it is a little smaller. You can get a jumbo version, which is more expensive, but the smaller version is fine for us.
If you don't have an air fryer, you can bake this mini berry pie in your toaster or regular oven on the convection setting at 325 degrees F for about 20 minutes.

Air Fryer Mini Berry Pie
This mini berry pie included strawberries, blueberries, raspberries, and blackberries. It's so sweet and juicy. For ease, it's topped with a store bought refrigerated pie crust, but you can definitely make your own pie crust, or even top it with puff pastry.
You can whip up and serve this mini berry pie in less than 30 minutes.
Air Fryer Mini Berry Pie
Yield: 4 servings
This mini berry pie is made with a mixture of four different berries and is baked in an air fryer. The mixture of strawberries, raspberries, blueberries, and blackberries is so fresh, sweet, and summery.
ingredients:
- 1/4 cup granulated sugar
- 1/4 teaspoon pure vanilla extract
- 1 teaspoon lemon zest
- 1 cup sliced strawberries
- 2/3 cup raspberries
- 2/3 cup blueberries
- 2/3 cup sliced blackberries
- 2 tablespoons cornstarch
- 1 pie crust, store bought or homemade
- 1 large egg
- pinch of salt
- Tablespoon of water

How to cook Air Fryer Mini Berry Pie
- Place the sugar, vanilla, and lemon zest into a medium sauce pan.
- Mix the berries together in a medium bowl. Measure 1 1/2 cups of the berries and place them in the saucepan with the sugar, vanilla, and lemon zest. Bring the mixture to a boil and cook for 4 minutes.
- Add the cornstarch and simmer for one minute more. Remove from the heat and stir in the rest of the berries.
- Pour the berry mixture into a 5 to 6 inch pie dish.
- Roll out your pie crust (or lay a store bought pie crust on your work surface), and cut it into an 8 inch circle.
- Whisk together the egg, salt, and water. Brush the edges of the pie pan with the egg wash.
- Place the pie crust over the filled pie dish and crimp the edge to seal it to the dish.
- Brush the top of the crust with some of the egg wash. Cut slits into the crust.
- Heat your air fryer to 350 degrees F and place the prepared mini pie into the air fryer basket.
- Bake for 15 minutes, until the top of the crust is golden brown and the filling is bubbly.
- Remove the pie pan from the air fryer and let sit for 15 minutes before serving.
- Serve warm or at room temperature.
