Yellow Cake Baked Oatmeal

This yellow cake baked oatmeal is sure to be a hit at your next breakfast or brunch. It's so good, you could probably almost pass it off as a dessert... like an oatmeal cobbler.

This baked oatmeal is a mixture of butter, milk, quick-cooking oats, eggs, and yellow cake mix all topped with peaches and raspberries. Yes, yellow cake mix. Trust me. 

This yellow cake mix baked oatmeal is pretty magical. Take a peek at the photo above and you can just about see in the baking dish that even though everything is mixed together before it's added to the dish, the batter separates into two layers. There is a custardy cake layer on the bottom, and a cakey oatmeal layer on top. 

How to make yellow cake baked oatmeal:

First, you mix some quick cooking oats with milk and heat them in the microwave. Then you let them sit for about 10 minutes to let them thicken up. 

After that, you mix in the cake mix, eggs, melted butter, and salt. You pour the mixture into a greased baking dish and top it with peaches and raspberries. You could also substitute blackberries or strawberries.

Because peaches are out of season, I used frozen peaches, and they worked just fine straight from the freezer. 

Finally, bake the oatmeal for about 30 minutes. Once you pull it from the oven, let it sit for a few minutes to let it set, but definitely serve it warm.

I used a shallow 3 quart baking pan for baking this yellow cake oatmeal. Mine was Corning, but a Pyrex 3 quart baking dish would work too. Just don't use a deep casserole dish. The area should be plus or minus about 120 square inches. 

You want just the right amount of area so that you can achieve that custardy bottom and oatmeal top. Plus, you want enough area so that you can scatter the fruit across the top.

About the yellow cake mix in this recipe... just go with it. Yes, you could analyze all of the ingredients in yellow cake mix and try to recreate it, but this is a special recipe. 

This recipe is adapted from Chrissy Teigen's book Cravings: Recipes for All the Food You Want to Eat. I'm a huge fan and also have her second cookbook,  Cravings: Hungry for More. I've gotten past my cynical envy of all of the gorgeous photos of her sitting in bed eating breakfast with John Legend, or cooking in the sexiest outfits ever to appreciate the deliciousness of her recipes. They are really good.

My husband has been ordered by his physician to add more oatmeal to his diet. Along with this recipe, I've recently made this amazing toasted oats bread and an applesauce oatmeal cake recipe this week. He loved this baked oatmeal, both for breakfast and dessert.

Yellow Cake Baked Oatmeal

This yellow cake baked oatmeal is sure to be a hit at your next breakfast or brunch. It's so good, you could probably almost pass it off as a dessert... like an oatmeal cobbler.

Ingredients

  • Butter or spray oil for greasing your baking casserole
  • 5 cups whole milk
  • 2 cups quick cooking oats
  • 2 cups yellow cake mix (from a box mix)
  • 4 large eggs, lightly beaten
  • 1 stick (4 ounces) butter, melted
  • 1/4 teaspoon kosher salt
  • 6 ounces raspberries
  • About 16 peach slices, fresh or frozen

Instructions

  1. Heat your oven to 350 degrees F. 
  2. Grease a 3 quart shallow baking dish with butter
  3. In a large microwave safe bowl covered with wax paper, combine the milk and oats and microwave on high for three minutes. Stir the mixture and microwave for an additional 3 minutes.
  4. Let the mixture rest for 10 minutes. 
  5. Stir the cake mix into the mixture until smooth. 
  6. Mix in the eggs, melted butter ,and salt.
  7. Scrape the batter into the prepared casserole. 
  8. Sprinkle the berries over the top of the batter. Next, add the peaches. 
  9. Bake for 30 to 35 minutes. Let sit for 10 minutes. 
  10. Spoon the baked oatmeal into bowls to serve.

  10. OMG! you are hilarious--i love your review of Chrissy Tiegen's book. :-) hahaha And this recipe does sound magical! i definitely need to try it!!!! I wonder what would happen if you used something like Kodiak cake mix (ya know--extra protein-so kinda healthier)? would it still be magical or too thick? hmmm
