This Instant Pot chicken and lentil soup is so delicious, nourishing, and warming on a chilly day.
This chicken and lentil soup is seasoned with wonderful combination of herbs and spices, which give the soup such a wonderful flavor. This soup is amazingly delicious, filling, and hearty. Plus, lentils are so nutritious.
This herbs and spices in this soup include garlic powder, cumin, oregano, coriander, turmeric, plus fresh cilantro, which all combine to create amazing flavors.
This recipe also calls for chicken bouillon. My favorite is Better Than Bouillon. It's the demi-glace of bouillons.
The chicken in this soup is boneless skinless chicken thighs. They hold up better to the pressure cooker as well as long braises, but if all you have is chicken breasts, they will work well too. You put the chicken into the pressure cooker whole and then shred it once the soup is done cooking.
For the chopped cilantro, don't worry about including some stems as you chop. Just wash the bunch of cilantro and begin slicing the bunch from the top until you have 1/4 cup of packed cilantro.
If you don't have an Instant Pot or pressure cooker, you can still make this soup on this stove top in a large Dutch oven. Just simmer everything, covered, for about 45 minutes after bringing the pot to a boil.
Serve this soup with a salad and crusty dinner rolls for an easy and light but filling dinner.
This soup makes terrific leftovers. You can have it for lunch the next day or freeze any leftovers for future meals.

Instant Pot Chicken and Lentil Soup
Ingredients
- 1 pound dried green or brown lentils
- 1 pound boneless, skinless, chicken thights
- 2 tablespoons chicken bouillon
- 1 medium brown or yellow onion, chopped
- 2 small tomatoes, chopped. I prefer Campari tomatoes
- 2 scallions, thinly sliced
- 3 garlic cloves, peeled and chopped
- 1/4 packed cup chopped fresh cilantro
- 1 1/4 teaspoon garlic powder or granulated garlic
- 1 1/8 teaspoon ground cumin
- 1/4 teaspoon turmeric
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground coriander
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 7 cups water
Instructions
- Combine all of the ingredients in an electric pressure cooker/Instant Pot.
- Seal and cook on high pressure for 30 minutes.
- Use natural release to release the pressure (until the float drops down).
- Open the pot and shred the chicken either in the pot or on a plate.
- Serve with more cilantro for garnish.

DeleteI think I need to either buy a bigger house or get rid of my hubby's stuff, cause there are so many toys I need to get. sigh That soup sounds amazing. An instapot is on my wish list. And now I've got another recipe for all those boneless chicken thighs currently residing my freezer.
