These tender and juicy lamb chops with roasted carrots are glazed with a honey, mustard, garlic, and thyme sauce after quickly roasting them in an air fryer.
This delicious recipe feeds two or three, depending on your appetite and the size of your lamb chops.
You cook these lamb chops on a bed of carrots, which you've already par-cooked in your air fryer. What's really cool is that you can cook a full meal at once, and not have to worry about cooking it in stages.
If you love lamb chops, you will definitely love this recipe, especially with the mustard, garlic, lemon, and thyme sauce. There is also honey in the sauce, which mellows out the mustard and garlic.
What makes these air fryer lamb chops so delicious:
First, the sauce. It is so tasty. Don't let the mustard deter you. Combined with all of the rest of the ingredients, the sum is greater than the parts.
Because these chops are not seared on a skillet or a grill, you accomplish browning them by brushing them with a honey and oil mixture prior to adding them to the air fryer. This will speed up their browning and the development of a crust on the outside of the chops.
Plus, the roasted carrots are unbelievably sweet and flavorful.
How to make these air fryer lamb chops with carrots:
First, you toss peeled and cut carrots with some oil and salt and cook them in the air fryer for about 14 minutes, tossing them halfway through.
Next, you to top the carrots with lamb chops that have been brushed with honey and oil and continue air frying for another 10 minutes, flipping the chops halfway through.
Finally, you brush the lamb chops with the mustard and honey mixture, tent them, and let them rest. Toss the carrots with the remaining mustard mixture and serve. So good.
Recipe Notes:
Be sure to use bone in lamb loin chops. They kind of look like mini T-bone steaks. Their flavor is very mild.
I found 3 1/2 ounce lamb chops, so I was able to fit six of them in the cavity of the air fryer. Ideally, if you can find 6 ounce lamb chops, use just four.
For the carrots, I used organic carrots with the tops still on them in the store. They're sweet, thinner, and easier to cut into uniform pieces.

Air Fryer Lamb Chops with Roasted Carrots and Mustard Thyme Sauce Recipe
Ingredients
- 1 pound carrots, peeled and cut into 2 inch pieces, with the thicker ends halved lengthwise
- 4 teaspoons extra virgin olive oil
- Salt and Pepper
- 1 tablespoon honey, warmed briefly in the microwave
- 4 6-ounce lamb loin chops (or 6 3 1/2 ounce chops)
- 1 tablespoon Dijon mustard
- 1 1/2 teaspoons minced fresh thyme
- 2 cloves garlics, peeled and minced
- 1 teaspoon lemon juice
- 1 teaspoon fresh lemon juice
- 1 teaspoon water
Instructions
- Toss the cut carrots in 1 teaspoon of the oil, 1/8 teaspoon of salt, and 1/8 teaspoon of freshly ground pepper
- Add the carrots to the air fryer and cook them for 14 minutes at 350 degrees F, tossing them halfway through.
- Combine 2 teaspoons of the warmed honey and 2 teaspoons of the oil and brush the lamb chops on both sides with the mixture. Season the lamb chops with salt and pepper.
- Arrange the lamb chops on top of the carrots and cook for 5 minutes at 350 degrees F.
- Flip the lamb chops over and continute to cook for another 10 minutes, until the chops reach 120 degrees F for medium rare.
- While the chops are cooking, add the mustard, thyme, garlic, lemon zest, lemon juice, water, 1 teaspoon of oil, and 1 teaspoon of honey to a medium bowl. Microwave for about 30 to 60 seconds, until warmed.
- When the lamb chops are done, move them to a plate, brush them with the warmed mustard mixture and tent with foil.
- Add the carrots to the bowl with the rest of the mustard mixture and toss. Season with salt and pepper to taste.
- Serve immediately.
