This pepper jack pimento cheese is so easy to put together and will pretty much become your favorite go-to cheesy snack.
I've spent my entire life in California, so I was tardy to the pimento cheese party. In fact, I have yet to have actually tried it other than my own experiments with pimento cheese. I've never seen it on a menu in any restaurant.
What a shame! I'm here to say that everyone on the west coast is totally missing out.
This pimento cheese recipe is easier to make as just about any other recipe. All you need is some grated pepper jack cheese, grated cheddar cheese, mayonnaise, and a jar of pimentos. Plus a little time for the flavors to meld. That's it.
Serve this pimento cheese on crackers for an amazing appetizer. Of course, I'm not too proud to admit I've been known to have leftover crackers and pimento cheese for breakfast.
If you are like me (not from the south), please suspend your judgment and give this a try. I always thought the idea of cheese mixed with mayo was kind of weird until I tried it. At that point, I was completely sold.

Pepper Jack Pimento Cheese Recipe
Ingredients
- 5 ounces cheddar cheese, grated
- 5 ounces pepper jack cheese, grated
- 1/3 cup mayonnaise
- 1 small jar (113 grams) pimentos, drained and patted dry on paper towels
Instructions
- Mix all of the ingredients together in a medium bowl. Cover with plastic wrap and refrigerate overnight so that the flavors can meld.
- Serve with crackers, toasted bread slices, or crudités.
