Imitation crab is an easy and inexpensive way to create a delicious salad for lunch, brunch, or a fun salad bar.
What is imitation crab?
Imitation crab is made from surimi, which is fish, usually pollock, that has been minced, mixed with other ingredients, cooked, and then formed. It's similar to the process for making cold cuts. It typically comes in sticks, flakes, or chunks. There is usually an added coloring to make it look like crab or lobster. I like ot buy a brand that uses natural coloring.
While it is not really crab, it is tasty and economical, and a great ingredient for creating a seafood salad for a crowd.
Plus, you can eat it straight from the package for an amazing low calorie snack.
Serving suggestions for this salad:
Serve this krab salad just like you might serve tuna salad. It makes delicious sandwiches or even imitation lobster rolls.
It's also excellent in grilled cheese melts.
Or simply serve it on its own on a bed of your favorite greens.
Back in the day, when I used to work in outside sales, one of my favorite places to grab lunch was Suzzler. I'd get their salad bar because it had the best all-you-can-eat krab salad. This salad brings back memories of that one.
You know those "salad bars," similar to Souplantation before they went out of business, where you could convince yourself that all you had was a salad when actually you could load up on all kinds of goodies.
This is a great make-ahead salad and leftovers last for at least three days in the refrigerator. Toss it with some cooked and chilled pasta for an even more substantial and hearty meal.
This salad is wonderful for taking to a picnic or a potluck. Everyone will love you, and I promise, they will all be asking you for the recipe.

Imitation Crab Salad Recipe
Ingredients
- 12 ounces of flake surimi/krab
- 3 tablespoons minced shallots
- 1/2 cup minced celery
- 6 tablespoons mayonnaise
- 1 teaspoon lemon juice
- 1/2 teaspoon sweet paprika
- 1/2 teaspoon Old Bay seasoning
- 1/4 teaspoon mustard powder
- 1/4 scant teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 tablespoons chopped fresh dill
- 1 1/2 tablespoons chopped fresh parsley
- Dash or two of hot sauce such as sriracha or Tabasco (optional)
Instructions
- Combine the surimi, shallots, and celery in a large bowl.
- Stir in the mayonnaise and lemon juice.
- Add the paprika, Old Bay, mustard powder, salt, and pepper, and stir.
- Add the fresh dill and parsley and mix. Add a few dashes of hot sauce to taste.
