Hot and Sour Soup with Pork

This hot and sour soup with pork is easy to make, delicious, and it satisfies the cravings you have for Chinese take-out any time of day.

This hot and sour soup is loaded with umami flavors. Serve it with shrimp fried rice, asparagus, pea, and leek stir fry, and shrimp and pork pot stickers for a complete meal

Hot and Sour Soup! What does that Mean?

Just like with Hot and Sour Egg Drop Soup, the "hot" can mean hot, temperature wise as well as spicy. This soup recipe includes a small amount of chili paste, which you can increase if you like. 

For the sour part, this soup gets its distinctive taste from rice vinegar. It's one of my favorite everyday Asian ingredients, and is delicious in salad dressings and as a flavoring on its own.

 What else goes in this Hot and Sour Soup?

Soy sauce: Use standard "light" soy sauce such as Kikkoman. 

Worcestershire sauce: The combination of the soy sauce and Worcestershire sauce contributes to this soup's distinctive color and umami flavor. If you have it on hand, you can substitute some fish sauce for some of the Worcestershire sauce for even more umami. 

Corn starch, sugar, scallions, and corn or peanut oil. 

Ginger: There is lots of grated ginger in this soup. Two tablespoons! This adds such a freshness and "sparkle" to this soup. My favorite way to grate ginger is by using a Microplane or Deiss grater. 

Pork: You can use pork tenderloin or boneless pork loin. 

Chicken broth.

This soup makes fabulous leftovers. In fact, you can make this soup a day in advance, let it cool, and refrigerate it. The next day, reheat it right before serving. It's just as delicious, and maybe even better. 

This is very satisfying soup, and, at just 150 calories per serving, is perfect when you want a super light meal.

This hot and sour soup with pork is easy to make, delicious, and it satisfies the cravings you have for Chinese take-out any time of day.

Ingredients

  • 6 tablespoons soy sauce
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoons sesame oil
  • 1/2 teaspoon chili paste
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 2 teaspoons corn or peanut oil
  • 2 tablespoons grated ginger
  • 3 scallions, thinly sliced
  • 1/2 pound pork tenderloin, thinly sliced and cut into small strips
  • 6 ounces shiitake mushrooms, stems discarded and caps thinly sliced
  • 6 cups chicken broth

Instructions

  1. Combine the soy sauce, Worcestershire sauce, vinegar, sesame oil, chili paste, cornstarch, and sugar and whisk to combine. 
  2. Heat a 4 to 6 quart sauce pan over high heat and add the corn or peanut oil, as well as the ginger and all but one tablespoon of the scallions. Sauté for a few seconds, add the pork and mushrooms, and sauté for one minute. 
  3. Add the chicken broth, bring the mixture to a boil, and reduce the heat to low. Add the soy sauce mixture and stir. Simmer until the mixture begins to slightly thicken, about 5 minutes. 
  4. Serve.
