These caramel apple cupcakes are perfect little packages for indulging your craving for cake and caramel apples.

This caramel apple cupcake recipe takes one of your favorite Halloween treat traditions and turns it into little bite-sized treats.
These treats begin with mini cupcakes made with applesauce and cinnamon. Making the cupcakes couldn't be easier. You don't even need a mixer.
Once you've made the cupcakes, just drizzle them with melted caramels and sprinkle them with nuts or Halloween sprinkles and insert wooden craft sticks for an adorable treat.
How to Make Caramel Apple Cupcakes:
First, whisk together the dry ingredients (flour, cinnamon, baking soda, and salt) in a medium bowl. In another bowl, whisk together the wet ingredients (applesauce, oil, and egg), plus the sugar. Pour the wet ingredients into the dry ingredients and stir until everything is combined.
These really are more like muffins than cupcakes, but calling them cupcakes will make them more popular with the little ones.
Divide the batter among 30 mini cupcake pan cavities, filling them about 3/4 full. I used a #40 cookie scoop, which worked perfectly.
You can either line the pan's cavities with paper liners or just grease the cavities to bake the cupcakes. I tried both methods, and found that using paper liners helped the cupcakes have rounded domes.
Once the cupcakes cool, microwave some caramel candies in a large bowl with some milk and drizzle it over the tops of the cakes. Immediately press in some chopped nuts or Halloween sprinkles and insert a wooden craft stick.
These cupcakes, once drizzled with caramel, are best the day they are made, and should be kept in a refrigerator if you make them in advance.
I liked presenting them in fresh decorative cupcake liners that I spread out to display the cakes. It's a great way to catch all the caramel drips.
These cupcakes make a really fun presentation. Plus, they are really tasty.

Caramel Apple Cupcakes
Ingredients
- 1 3/4 cups (7 and 3/4 ounces) all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup unsweetened applesauce
- 3/4 cup sugar
- 1/2 cup vegetable oil
- 1 egg
- 14 ounces caramel candies, unwrapped
- 2 tablespoons milk
- Chopped roasted nuts or sprinkles for decorating
Instructions
- Heat your oven to 350 degrees F with a rack in the center. Line 30 cavities of two mini muffin tins with paper liners, or grease the cavities of the tins. (Typically, each mini muffin tin will have 24 cavities).
- Whisk together the flour, baking soda, cinnamon, and salt in a medium bowl.
- In another bowl, whisk together the applesauce, sugar, oil, and egg. Add these ingredients to the flour mixture and stir with a spatula or wooden spoon until everything is mixed together.
- Scoop the batter into the prepared muffin tins, about 3/4 full, and bake, one pan at a time, for 14 to 16 minutes. Cool in the pan on a wire rack for 10 minutes, and then cool completely on a wire rack.
- Place the unwrapped caramels and the milk into a microwave safe bowl and microwave in 1 minute bursts, stirring in between, until smooth, about 3 minutes.
- Drizzle a spoonful of the caramel over the top of a cupcake and then dip the cupcake into the nuts or sprinkles. Alternatively, sprinkle the nuts or sprinkles over the caramel with your fingers.
- Insert a wooden craft stick into the top and let cool until the caramel has set.
