These peanut butter ghost cookies are homemade peanut butter sandwich cookies coated with a vanilla candy coating and accented with mini chocolate chips.

These peanut butter ghost cookies are such a big hit with the kids. The combination of flavors is sweet and peanut-y, and the cookies will remind you of Nutter Butters.
In fact, there are several versions of these cookies that use store bought Nutter Butters featured on the interwebs that inspired these cookies (and if you are pressed for time, you can actually use Nutter Butters to make a quick three-ingredient treat).
I had some oblong cookie cutters, so I decided to try making my own Nutter Butters.... and they were amazing!
How to make homemade Nutter Butter Cookies:
First, combine butter, peanut butter, and sugar and beat them together until they are light and fluffy. Next, beat in some egg whites.
Finally, add sifted flour, baking soda, and salt and beat on low until everything is combined. Cut out the cookie shapes and bake.
If you want to get the cross-hatch pattern on the cookies, use a dough scraper or plastic spatula to lightly press into the cut out cookies before baking.
Once the cookies are baked and cooled, whip together some confectioners' sugar, peanut butter, honey, vanilla, and butter and pipe it between two of the oblong peanut butter cookies.
Everyone who tried these cookies went crazy over them.

Dipping the cookies in vanilla candy coating and adding chocolate chip eyes to make them look like ghosts just makes them extra special for Halloween.
I had a really hard time resisting these cookies once they were in my house. I may have even had one or two for breakfast. They are so crispy and delicious.
These salty sweet cookies, filled with a peanut butter creme, are just about the the best cookies ever.

Peanut Butter Ghost Cookies
Ingredients
- 6 tablespoons unsalted butter, softened
- 1/3 cup creamy peanut butter
- 1 cup granulated sugar
- 1/4 teaspoon baking soda
- 1/4 teaspoon Diamond Crystal Kosher salt, or 1/8 teaspoon table salt
- 1 large egg whites, lightly beaten with a fork until pale and foamy
- 9 ounces (2 cups) all purpose flour, sifted
- 6 tablespoons unsalted butter, room temperature
- 1/3 cup creamy peanut butter
- 1 tablespoon honey
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon Diamond Crystal Kosher salt or 1/8 teaspoon table salt
- 4 ounces (1 cup) confectioner's sugar
- 8 ounces vanilla flavored candy coating melts, such as Wilton
- 40 mini chocolate chips
Instructions
- Heat the oven to 350 degrees F.
- Combine the butter, peanut butter, sugar, baking soda, and salt in the bowl of a stand mixer with the paddle attachment on low speed.
- Increase the speed to medium and mix for five minutes until everything is fluffy and pale.
- Slowly add the egg whites in four additions and mix until fully incorporated.
- Add the flour to the bowl and slowly mix until fully incorporated.
- Form the dough into a ball and divide into two pieces for easy rolling.
- Roll the dough out, one piece at a time, to 1/8 thick between two sheets of parchment paper, and cut the dough with oblong or round cookie cutters. Place the cutouts onto parchment lined baking sheets, about 1/4 inch apart. Gather up the scraps and re-roll and cut out more cookies.
- Optionally, add a cross hatch pattern by gently pressing the cookies with the edge of a dough scraper to form the pattern.
- Bake the cookies, one sheet at a time, 12 to 15 minutes.
- Cool the cookies completely on the baking sheets set on a wire rack.
- Combine the butter, peanut butter, honey, vanilla, and salt in the bowl of a stand mixer and mix the ingredients with the paddle attachment until combined.
- Slowly add the confectioner's sugar and beat on medium speed for about 5 minutes, until the ingredients are fully incorporated and the mixture is light and airy.
- Fill a pastry bag with a 1/2 inch tip with the filling and pipe about 2 teaspoons of the filling onto one cookie and sandwich with another cookie.
- Refrigerate the cookies until the filling has set.
- Melt the candy melts in a double boiler, stirring until smooth.
- Line a baking sheet with parchment or wax paper.
- Dip the cookies with tongs into the melted candy and then let the excess drip off.
- Place the coated cookie onto the baking sheet and add the chocolate chip eyes.
- Refrigerate the assembled cookies for 15 minutes to set.
