These spicy Spanish olives are great to have on hand for an impromptu appetizer or snack.
Serve these olives to guests and watch their faces when they take the first bite. They might just swoon.
This recipe is really flexible. You can use any type olives you like, including martini olives with pimento. You can use pitted or non-pitted olives too. I prefer pitted olives so my guests don't have to worry about the pits, but non-pitted olives do stay fresher longer.
I used a mixture of pitted Castelvetrano olives, pitted kalamata olives, and pitted ripe olives.
Additional ingredients include garlic paste, oil-packed sun dried tomatoes, and crushed red peppers. You toss the ingredients with Spanish smoked paprika, and a little bit of extra virgin olive oil.
If you like, you can toss in some cubed manchego cheese and/or bits of Spanish chorizo or salami when serving.
These olives made a delicious salty snack that takes on the delicious flavors of the marinade. You won't be able to keep your hands off of them.
These olives are perfect for a tapas party and are great parked near the bar for your guests who are waiting for their cocktails.
Serve them on a platter with grissini and salami for the perfect pre-dinner snack and to bring everyone together.
This recipe takes less than five minutes to put together. You will need to let them marinade for at least 15 minutes at room temperature. You can also make them in advance and keep them in the refrigerator in an airtight container for up to three weeks.
Just be sure to bring them to room temperature before serving.
Other ingredients you can experiment with are Spanish almonds, lemon zest and juice, red wine vinegar, rosemary, and thyme.

Spicy Spanish Olives
Ingredients
- 2 cups mixed brined olives, drained well
- 6 oil-packed sun-dried tomatoes, thinly sliced
- 1 large clove garlic, minced, or 1 1/2 teaspoons pre-chopped garlic paste
- 1/2 tsp. crushed red pepper flakes
- 1/4 tsp. smoked Spanish paprika
- 1 tablespoon extra virgin olive oil
Instructions
- In a medium bowl, combine all of the ingredients and set aside to marinate for 15 minutes.
- Serve at room temperature.
