This banana bread with delicious swirls of Nutella throughout the middle and on top is my new all time favorite version of this iconic quick bread.
This is the banana bread recipe I will use every time! The crumb is moist and evenly baked throughout and the chocolatey hazelnut Nutella pairs so well with the ripe bananas.
In fact, any time I have a banana from now on, I might just grab the Nutella to have with it. I'm pretty sure that if Elvis Presley knew about Nutella, he might have just substituted it for the peanut butter in his favorite sandwich.
This banana bread is moist and delicious and super easy to make. You don't need a mixer. All you need is two bowls, one for the wet ingredients and the sugar and one for the dry ingredients, just like making muffins.
I promise, you will find this to be one of the best and most reliable banana bread recipes. I had no issues with some of the problems folks sometimes have with banana bread such as a raw middle.
One reason this banana bread recipe is so reliable is that you weight the ingredients, including the bananas. Using a scale ensures that you have the right ratio of flour to bananas. Plus, there are a lot less dishes to wash because you measure directly into the bowl as it sits on your scale!
Another factor for the success of this banana bread is that it is made in a smaller pan, specifically in an 8 inch by 4 inch (3/4 pound) loaf pan. It's small enough so that, even though the batter is super moist from the banana, the bread bakes evenly.
This recipe is for two loaves. I only had one of these pans, so I baked the loaves one at a time, using the same pan twice (letting it cool in between).
Because I couldn't eyeball the batter level, I weighed the entire batter and then poured half of it, by weight, into the pan for the first bake, ensuring that I still had the same amount left for the second loaf.
Banana Bread with Nutella Recipe Variations:
You can skip the Nutella and bake the bread as is, or frost it with a cream cheese frosting.
You can add raisins, pecans, walnuts, or chocolate chips instead of the Nutella if you prefer.
Ingredients in this Banana Bread:
Ripe bananas - You will need 480 grams of bananas, which is about 4 1/2 large bananas.
Brown sugar - The molasses flavor adds so much to the bread.
Dairy - Melted unsalted butter and whole milk.
Nutella - You will need about 4 tablespoons of Nutella per loaf, half of which you swirl through the middle and half of which you swirl over the top of the bread.
Pantry Ingredients - All purpose flour, baking powder, baking soda, and kosher salt. I used Diamond Crystal Kosher Salt.
For my second loaf, pictured, I added an extra two tablespoons of Nutella and I was very happy with the extra chocolatey flavor, especially on top. So good!

What I love about the book is that she includes both weight and volume measurements as well as lots of tips for baking cakes. It's practically like taking a cake baking class. Plus, so far, the cakes have been wonderful.

Banana Bread with Swirls of Nutella
Ingredients
- 480 grams (2 cups) mashed very ripe bananas, about 4 1/2 large bananas
- 200 grams (1 cup lightly packed) light brown sugar
- 1/2 cup unsalted butter, melted
- 1/2 cup whole milk
- 2 large eggs, room temperature
- 2 teaspoons pure vanilla extract
- 400 grams (3 1/2 cups) unbleached all purpose flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons kosher salt
- 140 grams (1/2 cup) Nutella
Instructions
- Heat the oven to 350 degrees F and grease two 8 inch by 4 inch loaf pans with butter or spray oil and then line them with parchment paper.
- In a large bowl, mix together the mashed bananas, brown sugar, melted butter, milk, eggs, and vanilla.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Pour the dry ingredients into the banana mixture and stir just enough to combine without over mixing. The mixture should be smooth.
- Divide half of the total amount of batter between the two loaf pans. Heat the Nutella in the microwave for about 30 seconds and drizzle two tablespoons into each pan. Swirl the Nutella around with a knive. Divide the rest of the batter into each pan and top with the rest of the Nutella and swirl with a knife.
- Bake the loaves for 45 to 50 minutes, until a toothpick or cake tester comes out clean.
- Let the loaves rest in the pans on a wire rack for 10 minutes. Remove the loaves from the pan and let cool completely on a wire rack.

This was my original choice, but I changed my mind but I will definitely be making it soon as I am always looking for the next best banana bread recipe. Thanks for the suggestion to weight this one so that the batters are equal weights. This book sure has been a winner so far and I am all about cookbooks that have metric measurements.

DeleteHubba hubba! Normally I am a banana bread purist, no nuts, no spices, just beautiful, super ripe bananas. And leave chocolate out of all my quick breads. (I do like chocolate, just not in my breads.) But woah Nellie, this Nutella and banana bread is definitely calling to me!! I was going to make banana bread and someone ate one of my perfectly spotty bananas! Maybe I can try a mini loaf...
