These mini strawberry shortcake parfaits, made with just four ingredients, are a wonderful easy and light dessert to serve at your next dinner get together.
Sometimes you just need a quick and easy recipe that requires very few ingredients, especially after a fabulous dinner. These mini strawberry shortcake parfaits, served in little amuse bouche glasses, are light and refreshing, and totally delicious.
You can assemble these little desserts a couple of hours before your guests arrive and refrigerate them until you are ready to serve them.
These mini strawberry shortcake parfaits are the perfect way to use ready-made ingredients along with fresh, in-season strawberries to create an easy and elegant dessert.
Ingredients you will need for these strawberry shortcake parfaits:
Strawberries! Of course! And right now, the strawberry stands in every vacant lot in our area are teeming with fresh local strawberries.
Sugar: To macerate the strawberries. How long you will need to macerate the strawberries depends on their freshness. If they are naturally super sweet and in season, you can use very little sugar, or skip it altogether.
To macerate strawberries, toss them with sugar and refrigerate them for one to four hours. The longer you let them sit, the more syrup you'll end up with. It's really up to you. In this case, the strawberries were fresh from the strawberry stand, so I didn't have to let them sit for long.
Whipped Cream: To make this easy peasy, I used canned whipped cream. If you prefer, you can make your own sweetened whipped cream.
Cake: For the cake, I used store bought sponge cake lady fingers. You can also use leftover chiffon cake, angel food cake, or even crumbled vanilla cookies.
Assembling these little parfaits couldn't be easier. Just tear the sponge cake ladyfingers into bite sized pieces and layer them in a small glass such as a juice glass (4 to 5 ounces each) with the whipped cream and macerated strawberries.
You can assemble them a couple of hours in advance and refrigerate them until you are ready for dessert.
These parfaits are super light. The entire package of 12 mini sponge cakes was 240 calories (and I only used one per parfait), and the whipped cream is also very light, only 15 calories for two tablespoons, which is why I didn't feel guilty when I ate two of these "for quality control."
These are the perfect dessert for after a summer dinner party or family barbecue.
Growing up, strawberry shortcake in my experience was made with angel food cake or sponge cake. In fact, my favorite was made with angel food cake. It wasn't until later that I learned about the version of shortcake made with sweet biscuits.
These little strawberry shortcake parfaits remind me of the summer dessert of my childhood.

Mini Strawberry Shortcake Parfaits
Ingredients
- 3/4 to 1 cup strawberries, sliced
- 1 teaspoon granulated sugar (optional)
- 4 to 6 sponge cake lady fingers, torn or cut into 1 inch squares. You can substitute a slice of angel food or sponge cake.
- 16 tablespoons (about 2 "squirts" per parfait) ReddiWip-style whipped cream or homemade sweetened whipped cream
Instructions
- Toss the cut strawberries in a bowl with the sugar. Set aside for 1 hour or up to four hours.
- In small (approximately 4 to 5 ounces each) glasses, layer a couple of pieces of the sponge cake, two tablespoons of the whipped cream, and a few strawberries.
- Repeat layering once more.
- Refrigerate the parfaits until you are ready to serve.

Awesome idea Karen. I had 2 shortcakes left over, so broke them into chunks and layered it into glasses. Everyone enjoyed the dessert. Next time will try with the sponge fingers for a quick dessert.
