This chicken and seafood fried rice is a delicious combination of chicken, shrimp, bay scallops, squid, rice, vegetables, and eggs. You can serve it as either a main course or side dish. Either way, everyone will love it.

Shopping List for this Fried Rice:
Uncooked chicken thighs, cut into bite-sized pieces.
A mixture of uncooked shrimp, bay scallops, and squid. I found a bag of this mixed seafood in the frozen section of Trader Joe's, which worked perfectly. If you can't find it, you can substitute any once of the seafood ingredients or a combination of each ingredient you prefer.
Frozen vegetables: I used a mixture of frozen peas, carrots, and corn. If you have fresh ingredients, feel free to substitute.
From your pantry and fridge: Scallions, garlic, eggs, sesame oil, vegetable oil, and soy sauce.
Rice that has been cooked the day before and refrigerated. This is key to fried rice. If you don't have time to cook some rice, you can always buy the packages of pre-cooked ready rice. Just heat it according to the package directions and then spread it out onto a sheet pan to remove any excess moisture.
How to Make this Fried Rice:
My favorite pan to make this fried rice in is a carbon steel 14-inch wok. If you don't have one, a large skillet with rounded sides will also work.
First, sear the chicken in the pan in sesame and vegetable oil. Next, add the seafood and continue tossing and cooking the proteins, until partially cooked through. Remove them to a plate and wipe out the wok.
Add more oil to the wok, add the vegetables, stir-fry them for a couple of minutes, and then add the garlic.
Push the vegetables aside and add the eggs. Spread them over the wok, cutting them into pieces as they cook.
Finally, add the rice as well as the partially-cooked chicken and seafood and the salt and pepper, and stir-fry for two minutes.
This is a super flexible recipe. You can substitute any of your favorite vegetables, seafood, and add any other ingredients you love.

Chicken and Seafood Fried Rice
Ingredients
- 2 tablespoons sesame oil
- 2 tablespoons vegetable oil
- 12 ounces skinless chicken thighs, cut into bite-sized pieces
- 8 ounces mixed small shrimp, bay scallops, and squid pieces
- 1 1/2 cups frozen peas, carrots, and corn
- 3 scallions, finely sliced
- 3 garlic cloves, minced
- 3 eggs, lightly beaten
- 4 cups cooked day-old rice
- 3 tablespoons soy sauce
- Salt and pepper to taste
Instructions
- Heat a 14-inch carbon steel wok over high heat. Add the sesame oil and vegetable oil.
- Add the chicken pieces and stir fry for about 5 minutes. Add the seafood and cook for an additional 2 minutes. Using a slotted spoon, remove the proteins to a plate and set aside.
- Add the vegetables and scallions to the wok and cook, stir frying, for 2 minutes. Add the garlic and stir-fry for one minute more.
- Push the vegetables to the side and pour the eggs into the wok and spread around until the eggs begin to cook. Chop the eggs into small bite-sized pieces.
- Add the rice to the wok and stir-fry for about 2 minutes.
- Add the chicken and seafood mixture, the soy sauce, and salt and pepper, and stir fry until the mixture is just fully cooked. Serve immediately.
