These vanilla white chocolate chunk muffins are tender, sweet, and feature a crunchy sparkling sugar topping.
You can actually use this vanilla muffin recipe by itself, or you could substitute dark or milk chocolate chunks for the white chocolate.
This vanilla batter also is great with dried cranberries and white chocolate, caramel bits, or chopped candied pecans.
Use this batter as a base and create your favorite combination of add-ins.
Ingredients in these Muffins:
All purpose flour, baking powder, and baking soda.
Butter, sugar, and vanilla extract.
Eggs and buttermilk.
White chocolate chunks.
Sparkling sugar for finishing.
Making these Muffins:
First, whisk together the flour, baking powder, baking soda, and salt.
Next, beat the butter and vanilla in the bowl of a stand mixer or with a hand mixer and then beat in the sugar in four additions, then beat in the eggs, one at a time.
After that, add the flour and buttermilk and beat on low until just combined and then fold in the white chocolate chunks.
Finally, portion the batter among the lined cups of a muffin pan, sprinkle them with sparkling sugar, and bake the muffins for about 25 minutes.
Equipment You May Need:
Stand mixer or hand mixer for beating the butter: I like using a stand mixer because I can walk away, but a hand mixer is great too.
Ice Cream Scoop (or cookie scoop): The 1/4 cup one (size 16) is perfect for portioning the batter. If you don't have one, just fill the muffin pan cavities about 3/4 full.
Parchemin Muffin Liners: Thes are completely nonstick and perfect for any muffin that includes cheese, chocolate, or any other sticky ingredient.

Vanilla White Chocolate Chunk Muffins
Ingredients
- 180 grams (1 1/2 cups) unbleached all purpose flour
- 3/4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 stick unsalted butter, room temperature but still firm
- 2 teaspoons pure vanilla extract
- 1 cup granulated sugar
- 2 large room temperature eggs
- 1/2 cup buttermilk
- 3 1/2 ounces chopped white chocolate or white chocolate chips
- 4 teaspoons sparkling sugar
Instructions
- Heat your oven to 375 degrees F and line a 12-cup muffin pan with paper liners.
- In a medium bowl, whisk together the flour, baking powder, salt, and baking soda. Set aside.
- In the bowl of a stand mixer, beat the butter and vanilla until light and fluffy. Add the sugar in 1/4 cups and beat in between each addition. Beat for one minute on high.
- Add the eggs, one at a time and then beat for an additional minute.
- With the mixer on low, add 1/2 of the flour mixture and beat until just incorporated. Add the buttermilk and beat on low until just incorporated. Repeat with the rest of the flour mixture.
- Fold in the white chocolate chunks with a rubber spatula.
- Portion the batter among the 12 cavities of a muffin tin and sprinkle the top of each muffin with 1/4 teaspoon of sparkling sugar.
- Bake for 20 to 25 minutes, until golden brown.
- Cool in the pan on a wire rack and then de-pan and continue to cool.
- Store in an airtight container for up to three days.
I'm always looking for recipes to use buttermilk and my kid loves white chocolate so this is a win win!
