Muesli is a cold Swiss breakfast dish with a mixture of toasted grains, nuts and seeds, dried and fresh fruit, yogurt, milk, and honey.
It's a hearty and delicious breakfast that you mix the night before to soften the grains and then serve the next morning. This version includes toasted oats, wheat germ, and other goodies, and will last in the refrigerator for up to three days.
Just scoop out a portion into a bowl, top it with fresh berries and perhaps some toasted sliced almonds, and enjoy a fresh and nutritious morning meal. This overnight muesli will carry you all the way through to lunchtime.
This is like overnight oats, only much better.
With the fresh grated apples in the mix, this version is also known as Bircher Muesli. It's also a great way to use up odds and ends of dried fruit you might have on hand. The recipe is very flexible.
Ingredients in this Muesli:
While every muesli is different, the main ingredient in most is rolled or old fashioned oats. With this muesli, there are also a lot of other grains as well, including cracked wheat (or bulgur), wheat germ, and millet. The mixture is complex in flavor and super creamy in texture.
Be sure to toast the rolled oats and wheat germ for more flavor. Either toss them in a heated skillet until they are fragrant, or bake them in a 350 degree F oven for just a few minutes, watching them closely.
You will also need plain whole milk yogurt along with whole milk and honey. Additional ingredients include ground flax seeds and chia seeds.
For the dried fruit, I used chopped prunes and golden raisins.
Finally, add some fresh ripe banana slices and freshly grated apples, skin included and stir everything together with a pinch of salt. Rest assured, the apples won't brown in this mixture.
Cover everything and let it rest overnight.
When you are ready to serve, scoop it into bowls and top it with fresh berries and sliced fruits.
Muesli Recipe Variations:
Instead of the honey, you can substitute maple syrup. You can also add a bit of pure vanilla extract and/or a bit of cinnamon for more flavor.
Instead of apples, you could add raw grated pears, or even peaches, depending on the season.
For the prunes, feel free to substitute dried figs, dates, or any other dried fruit you might have on hand.
If you don't have any chia seeds, you can substitute poppy seeds.
You can also add toasted almonds or pecans to the overnight mix, or save them for serving with the fresh berries.
While it might remind you of the "crunchy granola, back-to-nature" hippie-dippie era, give muesli a try. I grew up in that era, so I resisted just because of the cliché, but I really loved revisiting this cereal.
This breakfast will honestly fill you up and carry you through the morning. Plus, it's really tasty!

Overnight Muesli
Ingredients
- 3 cups whole milk
- 2 cups plain whole milk yogurt
- 2 apples, skin on, grated. I used Envy apples.
- 1 large ripe banana, sliced
- 3/4 cup (125 grams) golden raisins
- 9 tablespoons (110 grams) cracked wheat or bulgur
- 1 cup (110 grams) wheat germ, toasted
- 9 tablespoons (50 grams) rolled oats, toasted
- 1/4 cup honey
- 1/4 cup (35 grams) chopped prunes
- 2 tablespoons millet
- 2 tablespoons flaxseed meal (ground flaxseeds)
- 1 tablespoon chia seeds
- Pinch of kosher or sea salt
- Fresh berries or fruit for topping
Instructions
- Combine all of the ingredients, with the exception of the fresh berries, in a large bowl, cover with plastic wrap, and refrigerate overnight.
- The next morning, scoop the mixture into bowls and top with fresh fruit.
