These small-batch chocolate chip and pecan banana muffins are loaded with chocolate chips and pecans, plus, they are a great way to use up that last banana!
These are pretty much portable mini banana breads in muffin form, but the chocolate chip and pecan to bread ratio is much higher, perfect for chocolate and pecan lovers.
These muffins are a great excuse for having chocolate for breakfast! You can bring one to work and no one will know because their looks belie their chocolate-y interior.
Ingredients:
Banana: You will need one-third cup of mashed very ripe banana, the equivalent to a small to medium banana. I used a kitchen scale to measure the amount of banana I used.
From the Pantry: All-purpose flour, ground cinnamon, baking soda, baking powder, salt, granulated sugar, brown sugar, vanilla, and semi-sweet chocolate chips.
I used full-sized chocolate chips but I'm sure mini chips would be fine too.
Chopped Pecans: You could substitute walnuts for the pecans if you prefer.
From the Refrigerator: Butter and an egg. For the egg, because the recipe is "small batch," use a medium egg. If you only have large eggs, you can whisk one and then measure out 40 grams of the egg.
Tip for Success:
To evenly divide the batter among the muffin cups, use a measuring tablespoon to measure three tablespoons of batter into each. Then, divide the rest among the five muffin cavities. A mini rubber spatula to scrape the batter out of the measuring spoon is really helpful.
Storage:
These muffins will stay moist in an airtight container for up to three days. You can also individually wrap them and freeze.

Chocolate Chip Pecan Banana Muffin (Small Batch)
Ingredients
- 60 grams (1/2 cup) all-purpose flour
- 1/4 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 28 grams (2 tablespoons) unsalted butter, melted
- 50 grams (1/4 cup) granulated sugar
- 42 grams (3 tablespoons) light brown sugar
- 85 grams (1/3 cup) mashed ripe banana
- 1 medium egg, whisked
- 1/2 teaspoon vanilla extract
- 44 grams (1/4 cup) semi-sweet chocolate chips
- 30 grams (1/4 cup) chopped pecans
Instructions
- Heat the oven to 375 degrees F and line 5 cavities of a muffin tin with paper liners.
- In a small bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. Set aside.
- In a medium bowl, combine the melted butter, sugars, banana, egg, and vanilla, and whisk until completely combined. Add the flour mixture into the medium bowl and stir everything together with a rubber spatula until just combined. Add the chocolate chips and pecans and stir.
- Measure three tablespoons of batter into each muffin cup and then divide the remaining batter (about 1 1/2 teaspoons each) among each muffin cup.
- Bake the muffins on the center rack for 20 to 23 minutes until the center is set.
- Cool the muffins in the pan for 5 minutes before removing to a wire rack to cool completely.
